This super easy & quick crust-less quiche hit the spot as my mid-morning snack. It would also be great at your next brunch or as a light dinner served alongside salad.
|Crust-less Spinach Quiche||

- 2 eggs
- 2 cups cottage cheese
- 1 (10 oz.) package frozen spinach, thawed & squeezed dry
- 1/2-1 cup diced onion
- salt & pepper to taste
- 1 teaspoon dill
- Preheat oven to 400°F.
- Saute onions in a medium pan until translucent and tender. Mix all ingredients in a large bowl. Make sure you beat the eggs a little before adding the other ingredients. Pour mixture into an oiled 9″ x 9″ pan.
- Bake in preheated oven for 30 minutes, until top is browned. Let cool for 10-15 minutes then slice and serve.
